As I was perusing Pinterest for recipes yesterday I stumbled upon this delicious looking recipe. I may not be the best cake decorator or cupcake connoisseur but recipes like this are perfect. No fuss with frostings or sprinkles, just the goods baked altogether in a lovely little bar. 
And I honestly have to say this recipe was so so simple for making it from scratch. Sometimes things can get too moist (lol to the people that hate that word) or dryer than a desert. But these came out beautifully and bonus they're gluten free!


Flourless Peanut Butter Oatmeal Bars with Chocolate Chips

Ingredients //

~ 1 cup creamy peanut butter
~ 3/4 cup light brown sugar
~ 1/2 teaspoon baking soda
~ 1/8 teaspoon kosher salt
~ 1 large egg, at room temperature
~ 1 teaspoon vanilla extract
~ 1/2 cup semi-sweet chocolate chips
~ 1/3 cup old fashioned rolled oats

Directions

Step 1: Place rack in the center of your oven and preheat oven to 350 F (176 C). Line an 8X8 inch baking dish with parchment paper and lightly coat with cooking spray. Set aside.
Step 2: In a large mixing bowl, beat together the peanut butter, brown sugar, baking soda, and salt on medium speed until well combined. 
Step 3: Add the egg and vanilla, then mix on medium low, just until incorporated. By hand, stir in the chocolate chips and oats. 
Step 4: Press the dough into the prepared baking pan. Bake for 22 minutes, until golden and the top is set. Let cool completely in the pan. Remove, slice and serve.
